Hi, I’m trying to get text to appear as the site logo (instead of graphic logo that I can set up in Avada settings). This should be taken from the Site Name field that is filled in the WordPress settings > general options.

Hi, I had the same goal and solved it by using the header with the tagline and putting my logo text in as the tagline. I don’t recommend replacing the built-in logo element on your site with plain text.
Instead of putting plain text in that area, maybe generate a vector file (SVG) for the text you want in that spot. Then upload your SVG file into the logo area. I think this is a more professional and standard approach. You also don’t need to implement any work-around hacks this way because this is a standard approach.
I think this will help your SEO as well. Because supplying logos (graphics or text in your case) is structured data. Structured data helps search engines like Google index your site better. Someone please correct me if I’m wrong.
There are plenty of free vector graphic editors out there. I like Vectr (https://vectr.com/).
